Before our first child was born, we did what the world told us was “healthy”—two years on a plant-based diet, convinced it was the key to wellness. Instead, it wrecked Chad’s gut, drained his energy, and left his body falling apart. Desperate to heal, he went all in on an animal-based diet. Everything changed.
That’s when we discovered the power of beef tallow. Maggie’s own health struggles only reinforced what we were learning—her body needed tallow. Other oils made her sick. But when we went looking for it, we found nothing.
So we did what generations before us did. We went to a butcher, got beef fat, and made it ourselves.
Then we gave a jar to Chad’s dad.
“Grandma used to cook with this. She never threw away the fat.”
That was the moment. Tallow wasn’t just missing from our diet, it had been erased from modern life. We knew we had to bring it back.
